
This is from my friend Kristin! The first time we made it together was for our "Presents Dates" at BYU! (needless to say the relationships didn't last, but we LOVE this recipe!)
8-10 chicken tenders or 4-5 breasts
2 c PLAIN lowfat or nonfat yogurt
2 parts crushed ritz crackers
1 part grated parmesan cheese
1/4 -1/2c melted butter
Preheat oven to 350 and butter a 13 x 9 baking dish. Stir yogurt and put in a dish. In a separate dish, crush crackers and mix in cheese. Dip chicken pieces into yogurt and coat well on both sides. Then dip into cracker mixture and place in baking dish. Drizzle melted butter over chicken and bake for 30-45 minutes until chicken is done.
