The ULTIMATE chicken tacos
These are very tasty and remind me of the ones I love at Cheesecake factory. This is from my friend Kristen, only she makes hers with shredded beef. We like them best with fried corn tortillas--very restaurant-style! The lime juice makes them so yummy!4-6 chicken breasts or 2 lbs boneless beef chuck roast
1 onion minced
1 whole garlic minced
1 tsp salt
2 TBSP olive oil
1/2 c tomato sauce
1 tsp ground cumin
black pepper
FRESH lime juice
cajun seasoning
1 can green chilis
Place chicken, 1/2 of garlic, 1/2 of onion and salt in crockpot with enough water to cover. Cook until done. Let chicken cool in broth and then drain. Reserve 1/2 c of broth. Using 2 forks shred the chicken and set aside.
Heat oil in large skillet over low heat. Cook minced onion and garlic until softened. Add chicken, tomato sauce, chilis, cumin, broth and lime juice to taste. Sprinkle cajun seasonings or cayenne pepper to taste and salt and pepper. Simmer about 5 minutes.
Squeeze more fresh lime juice over shredded chicken if needed. Heat a tsp oil in skillet and cook each side of corn tortillas until golden. Enjoy! ( so much better than using taco seasoning packet)
Key Lime Pie
This recipe is from my friend Cherre. 1 can sweetened condensed milk ( fat free works)
4 egg yolks
1/2 c key lime juice fresh or from bottle
2 tsp lime zest
Whisk ingredients and add drop of green food coloring if desired. Pour into graham cracker crust. Bake at 325 for 15-17 mijnutes or until center looks set but jiggles like jello.
Cool and then refrigerate.

Marianne Warner's Recipes--Italian casserole
These next two recipes are from a dear sister in our Huntington Beach, CA 2nd ward. She is no longer with us and her wonderful daughter shares her mother's delicious recipes. This is very tasty and different from any other pasta casserole or lasagna.Italian Casserole
1 lb ground beef
2 ribs celery
4-5 cloves garlic
1/2 onion chopped
5 c spaghetti sauce
1/2 tsp oregano
1 tsp Italian seasoning
12 oz egg noodles
1- 8oz cream cheese
1 pt sour cream
1 lb shredded mozzerella
Cook beef, onion, garlic, and celery. Boil noodles until done. Season beef with salt and pepper. Add sauce and seasonings. Heat to boiling and simmer 15 minutes. Beat cream cheese, sour cream together and add mozzerella. Butter 9 x 13 baking dish. Layer 1/2 noodles, half sauce, half cheese mixture. Repeat. Cook covered at 325 for 30 min. Take off foil and cook additional 10 min. You may add additional cheese on top!
Chicken Enchiladas

Chicken Enchiladas
8-10 chicken tenders
1 c sour cream
1/4 diced green chilis
1 lb shredded Pepperjack cheese
1 1/2 c green enchilada sauce
1/2 tsp cumin
salt & pepper to taste
Boil tenders in Cajun seasoning just until done. Shred with 2 forks. Mix other ingredients, but only 3/4 c of the enchilada sauce, reserving some cheese for the top. Add chicken and put into flour tortillas and roll and place in buttered dish. Pour remaining sauce over enchiladas. Cook at 350 for 30 min. Top with cheese last five minutes.
